A little while ago, I did a full what I eat in a day video on my YouTube channel. And, I wanted to share it on this platform as well! Considering the summer is right around the corner, it’s the perfect time to start eating lighter and colder foods. (Especially if you’re a fellow Austinite!)
As a disclaimer, I am not a dietitian and I am not on a specific diet. This is a random what I eat in a day when working from home. This is not dietary advice whatsoever! But, I would love to have you along for the ride to see what I like to fuel my body with on the daily.
Breakfast: Avocado sourdough toast
My breakfasts always change, but this has been my go-to recently. I love any sort of carbie food in the morning. Recently, my carb of choice is the way too well-known avocado toast. To make this, I toast my bread in a little bit of butter on the stove (mainly because I don’t have a toaster). Then, I mash my avocado and mix chili powder, lemon pepper, and salt together. To top it off, add a balsamic glaze.

Snack: Veg + fruit
I’m one of those people that love snacking. Since working from home long term, this is a great way to get me away from the computer throughout the day. I do want to note that you want to avoid mindless eating. I try and drink a glass of water before grabbing a snack to ensure I’m actually hungry. And, today, I was still hungry, so I had a snack that consisted of fruits and veggies.

- One small apple
- A handful of baby carrots
- A handful of blueberries
Lunch: Nourish bowl
Once it gets later in the day, I do whatever I can to get greens into my diet. Greens are normally the base of my meals, then protein, additional fiber, and gut-healthy foods (like sauerkraut). Today, I made a nourish bowl with lettuce, sauerkraut, beans, quinoa, turkey, and cucumber slices.

Snack: Frozen fruit + almond butter
In the afternoon, I crave something a little sweeter and more filling. Since nuts have a high source of fat, I decided to dig into this as a snack. I had a frozen banana and a little bit of almond butter. Whenever I go grocery shopping, I get a bunch of bananas to cut in half and throw in my freezer to eat throughout the week.

Dinner: Small salad + ACV mocktail
My “filling” snack turned out to be a little too filling. When it came to dinner, I wasn’t that hungry. I pushed dinner out a lot later than normal ~ 7:00 ish. But, I knew I’d want to eat something or I would get super hungry way later in the night. So, I decided to make something extremely light. Opting for a small salad, I threw together romaine, quinoa, salt, pepper, balsamic, olive oil, cheese, turkey, and an ACV mocktail.
To make the ACV mocktail, I mix water (or sparkling water), ½ lemon, ½ lime, stevia, ice, and a couple of shots of apple cider vinegar. I do like to drink this out of a straw due to the high acidity of ACV.

I love easy and healthy meals like this. I’m not a big cooker, but I do love to eat healthy foods. To do that, you have to find the perfect medium. Recently, I’ve been meal planning on Sundays before doing my weekly grocery shop. And, I always start my process by looking at inspiration on Pinterest.
